Confetti Couscous

This recipe confetti couscous allows you to have light and delicious meal while also staying healthy! A favorite Mediterranean side dish that your family will love. It pairs well with our other diabetic-friendly recipes.

INGREDIENTS FOR CONFETTI COUSCOUS

DIRECTIONS

  1. In medium saucepan, combine salt, cumin, and 1 ½ cups water.
  2. Bring to a boil over high heat. Add couscous, stir to combine.
  3. Cover and remove from heat. Let stand for 5 minutes. Fluff with fork.
  4. Cook corn according to package directions or steam fresh corn for 5 minutes.
  5. Combine couscous with red bell pepper, cucumber, black beans, corn, onion, and basil.
  6. Stir in olive oil and lime juice.
  7. Serve warm or at room temperature.
