Buttermilk Oatmeal Pancakes

Buttermilk oatmeal pancakes for breakfast?!? This twist on a class recipe creates a perfect and healthy breakfast. Oatmeal is anti-inflammatory and buttermilk has a low glycemic index.

INGREDIENTS FOR BUTTERMILK OATMEAL PANCAKES

DIRECTIONS

  1. Combine buttermilk, oats and vanilla in a bowl.
  2. Let stand 10 minutes, stirring occasionally.
  3. Stir in oil and egg.
  4. In a large bowl, combine flour, brown sugar, baking soda and salt; stir well. Add oat mixture to flour mixture, stirring until smooth.
  5. Spoon about 1/3 cup batter for each pancake onto a hot non-stick griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Makes 8 pancakes.
