Barbecue Pulled Pork

This flavorful and classic barbecue pulled pork dish is the perfect healthy recipe! Pair it with one of our diabetic-friendly salads or side dishes.

INGREDIENTS FOR BARBECUE PULLED PORK

DIRECTIONS

  1. Heat the oven to 350°F.
  2. Seat the whole tenderloin on all sides in a hot, nonstick skillet.
  3. Remove from the heat and season with the pepper and red pepper flakes.
  4. Cover the tenderloin with foil for 25 minutes.
  5. Heat the oil in a medium saucepan and sauté the onion and garlic for 5 minutes.
  6. Add the barbecue sauce, ketchup, water, and vinegar.
  7. Simmer for 10 minutes. Shred the pork with two forks.
  8. Add the pulled pork to the sauce. Serve on buns.
