Barbecue Pulled Pork
This flavorful and classic barbecue pulled pork dish is the perfect healthy recipe! Pair it with one of our diabetic-friendly salads or side dishes.
INGREDIENTS FOR BARBECUE PULLED PORK
- 1 lb boneless pork tenderloin
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
- 1 Tbsp canola oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup barbecue sauce
- 1/4 cup ketchup
- 1/4 cup water
- 1 tsp vinegar
DIRECTIONS
- Heat the oven to 350°F.
- Seat the whole tenderloin on all sides in a hot, nonstick skillet.
- Remove from the heat and season with the pepper and red pepper flakes.
- Cover the tenderloin with foil for 25 minutes.
- Heat the oil in a medium saucepan and sauté the onion and garlic for 5 minutes.
- Add the barbecue sauce, ketchup, water, and vinegar.
- Simmer for 10 minutes. Shred the pork with two forks.
- Add the pulled pork to the sauce. Serve on buns.
